This actually turned out pretty well, though insufficiently sinus-clearing. Next time I’ll cook the beans BEFOREHAND. I also have 1 lb. of ground beef waiting from the farmer’s market, where it cost $6.00, instead of from the grocery store, where my first lb. was from at the exorbitant price of $9.25.
Besides beef and beans, this chili requires white onion, 2 cans fire roasted diced tomatoes, 1 can plain tomato sauce, 1 can corn.
~1 lb. 90% lean ground beef and one diced white onion on medium heat. Add salt, cumin, minced garlic. 5 -7 minutes, till brown.
Add 1 can fire roasted diced tomatoes.
Add 1 can plain tomato sauce.
Set aside on another burner to simmer on low. Add chili powder and smoked paprika.
Put 1 cup dried black beans in 3 c warm water.
Add 1 can diced tomatoes. Add minced garlic, 1 oz sliced jalapenos, cumin, salt, lime juice, chili powder, smoked paprika. Simmer for 1.5 hours.
Combine the meat and beans. Add 1 can corn. Bring to boil. Turn to low. Simmer for about 0.5 hour.
