Beans:
3 c warm water, 1 c dried black beans, 3 chipotle peppers and some adobo sauce from a can, minced garlic, oregano, cumin, salt, lime juice, chili powder, smoked paprika. Simmer until done.
The rest of the chili:
In a big flat-bottomed pot, put heat on medium.
Add 1 diced white onion and 1 lb ground beef. 1 diced yellow pepper optional. Keep stirring and breaking up meat with spatula. Cook until meat is browned and onion translucent, 7 to 10 min.
Add minced garlic, oregano, cumin, chili powder, smoked paprika, lime juice. Cook 1 min.
Add beans and stuff, 1 can jalapenos, 1 regular can corn, 1 can plain tomato sauce, 2 cans diced salsa style tomatoes. Stir.
Wait till the chili comes to a low simmer [blorp blorp] on medium. Simmer for 30 min.
